Shirako (literally 'white children' — the milt/sperm sacs of male fish) is one of Japanese cuisine's most extraordinary delicacies. When properly handled, shirako has a texture that defies description — creamier than custard, richer than tofu, delivering a wave of pure marine umami. The two most important sources are Madara (cod) shirako and Fugu (pufferfish) shirako, with Fugu-shirako being the more precious.
Cod shirako is enjoyed throughout the winter — deep-fried tempura style, poached in ponzu, or served in nabe. Fugu shirako, available only from licensed processors due to the toxicity of other fugu organs, is an ultra-luxury item served in the finest restaurants during a brief winter window. The extraordinary richness makes even a small portion memorable.
Advance Intertrade sources both cod and fugu shirako from Japan's winter fisheries. Fugu shirako is strictly by pre-order given its rarity and licensing requirements.
Lightly poached, chilled, and served with ponzu, grated daikon, and scallions — showcases the pure creamy texture.
The tempura preparation is famous — crispy exterior, molten-cream interior. A revelation for those trying shirako for the first time.
Added to hot pot at the end — briefly cooked in the broth, the creaminess enriches everything else in the pot.
A legendary pairing with warm sake — the rich texture and umami-heavy flavor benefit from warm alcohol.
