The Supreme Squid

Aori Ika (Bigfin Reef Squid) is universally regarded as the finest squid in Japanese cuisine — a large, thick-bodied species that combines exceptional sweetness, remarkable tenderness, and a translucent, jewel-like appearance that makes it as visually stunning as it is delicious. It regularly commands the highest prices of any squid species at auction.

What sets Aori Ika apart is the thickness and richness of its flesh — 5-10 times thicker than common squid species, with a texture that is simultaneously firm and yielding. The Japanese consider a 3-4 day aging (jukusei) period ideal, during which enzymes convert proteins into free amino acids, dramatically intensifying the sweetness. Truly great sushi bars serve aged Aori Ika as one of their signature items.

Advance Intertrade sources Aori Ika from Nagasaki and the Kyushu coast, prioritizing line-caught specimens (which arrive undamaged) over trawl-caught. Live specimens are the ultimate expression of quality for sushi bars that can accommodate them.
