Kyushu and Ehime produce about 80% of Japan's farmed yellowtail, amberjack, sea bream, flounder, fugu and bluefin tuna (MAFF, 2024). For these fish, Fukuoka is usually the cheaper place to buy: they come straight from the farm instead of a truck trip to Tokyo, there are no Toyosu auction fees or extra handling on the way, and our volume covers the X-ray inspection fee.
