Kuromutsu (Gnomefish) is a deep-water species with dark, lustrous skin and rich, fatty white flesh. Less well-known internationally than its relative Akamutsu, Kuromutsu is highly prized among Japanese chefs for its bold flavor and versatility.

Found in rocky deep-sea environments off Nagasaki and other western Japanese coasts, Kuromutsu has a higher fat content than most white fish, giving it a luxurious mouthfeel similar to Nodoguro.
