Ara (Longtooth Grouper / Kelp Grouper) is one of the rarest and most expensive fish in all of Japan — a legendary species that regularly commands prices of ¥30,000+ per kilogram at premium auctions, with exceptional specimens selling for over ¥100,000 per fish. It is the fish of celebration, of the most exclusive kaiseki restaurants, of collectors and connoisseurs.

Growing to over 30 kg, Ara inhabits deep rocky reefs where it can live for decades. The flesh is extraordinary — firm, exceptionally rich in collagen (creating a wonderful gelatinous mouthfeel), and imbued with a deep, umami-rich flavor that no other fish quite matches. The head and collar, cooked in nabe, are considered among the greatest culinary experiences in Japanese cuisine.

Advance Intertrade sources Ara from Nagasaki's premier auctions, where line-caught specimens from Kyushu and Tsushima are graded and sold. Given its rarity, Ara is always by pre-order and requires significant advance notice.
