Botan Ebi (Botan Shrimp / Spot Prawn) is named for its striking resemblance to a peony flower (botan) when butterflied open — the spread-out shape and dramatic size make it as much a visual centerpiece as a culinary one. Growing to 100g or more, Botan Ebi is one of the largest sashimi-grade shrimp in Japan.
Where Amaebi is delicate and creamy, Botan Ebi is bold — firmer flesh, deeper sweetness, and a satisfying substance that makes it feel more like a piece of shellfish sashimi than a shrimp. The distinctive black and orange spots (which give it the English name 'Spot Prawn') mark it as an unmistakable premium species.
