Okoze (Devil Stinger) is one of Japan's most paradoxical fish — its grotesque, spine-covered appearance conceals what many chefs consider the finest white flesh in the entire ocean. The venomous dorsal spines that give it its fearsome reputation must be carefully removed by skilled processors, but the reward is a fish of extraordinary quality.
