Wild Madai represents the pinnacle of Japanese seafood. Unlike farmed specimens, wild red sea bream develop firmer flesh and more complex flavor from swimming in open ocean currents and feeding on natural prey.
The most prized wild Madai come from the Naruto Strait and Akashi, where powerful tidal currents create exceptionally firm-fleshed fish. Nagasaki also produces excellent wild Madai, caught by hook-and-line for the highest quality.
