Yari Ika (Spear Squid) is a winter and spring species named for its slender, torpedo-shaped body that resembles a spear (yari). Where the popular summer Surume Ika has a firmer, chewier texture, Yari Ika is characterized by an unusually soft, silky, almost melting quality — making it the preferred squid for the most refined sushi and sashimi preparations.
The cold-water habitat produces a mild, delicately sweet flavor and a texture that is remarkably tender even without aging. The transparent, glossy appearance of fresh Yari Ika is one of the most beautiful sights on any fish counter — an unmistakable indicator of quality.
